Typically one spends the first few weeks of the new year organizing and evaluating how to live a better, healthier lifestyle. Well, what if you're a bit of an overachiever and did it during the days leading up to the New Year? Instead, I have spent my time entertaining food ambitions. Growing up, I was a picky eater - in fact, picky may be an understatement. Once I began to broaden my "food" horizons, I found that all the things I thought (okay, never tried) I hated, I really ended up liking.
This post may be a bit misleading because I, in fact, have always loved sweet potatoes. However, I am trying to break the habit of eating potato chips, so, I thought sweet potato chips were a good alternative. Another one of my many food ambitions. No oil, no frying, just salt. All I did was slice up three sweet potatoes (thinly) on a mandolin slicer, tossed them in a teaspoon of olive oil (to keep from sticking to the baking sheet), sprinkled some salt and baked for about 25-30 minutes. Now, if you've ever visited Dexter's in Orlando (shout out to my brother-in-law, Chris) then you know that they serve "Cha Cha" chips along with a sweet chili sauce - I found this recipe that is almost an exact replica. Bingo - weekend made
